As one of the first to experience this new gem, the resort offers an exceptional blend of refined dining, wellness, and breathtaking scenery.

The food across the resort’s restaurants is nothing short of remarkable. From Mexican to Middle Eastern menus, the culinary offerings are both adventurous and satisfying. One of the highlights was the Mesa Madre restaurant, where traditional cooking styles from across Mexico were showcased. Dishes like grilled octopus in a creamy chipotle sauce and a rich mole de olla with beef were highlights of our stay. The dessert menu, led by expert pastry chef Miguel Gómez, included a warm layered chocolate mug that was a delightful end to any meal.
Dátil, the lobby cafe, serves strong Mexican coffee and grab-and-go options, while breakfast at Mesa Madre offered a wide selection of Mexican egg and masa dishes, fresh sweet breads, and large smoothies. At the beach club, Costamar served ideal snacking food, including a trio of zippy crudos. Although Silán, the more formal Mediterranean cuisine option, had not yet opened during our visit, the Levantine menu was available at the beach club, featuring dishes like turbot with herbs and saffron rice.
A Wellness Haven
The Park Hyatt Saria Spa is a true showpiece, spanning nearly 60,000 square feet. Designed around a sprawling courtyard of white stone and water features, it feels like a sanctuary. The spa includes ten cabins—five doubles—for personalized treatments, along with a hydrothermal therapy circuit featuring a cold plunge, sensory shower, and Jacuzzi. The on-site fitness center is spacious, with a patio reserved for outdoor training on the Outrace Tower device.
Luxurious Accommodations
The hotel boasts 163 guest rooms and suites, all designed with cool, contemporary aesthetics. Light wood furnishings and sand-colored stonework create a serene atmosphere. Standard rooms start at 649 square feet and come with private terraces offering ocean or resort views. The three villas—two with two bedrooms and one with three—are ideal for multi-generational trips. Our villa featured an expansive poolside patio for morning coffee and a living room with a big screen for evening movies.
Golfing Paradise
Cabo del Sol, the development that includes the hotel, is home to two of the region’s best golf courses. Our first morning began with a round of golf, taking in the extraordinary desert seascape. After a lesson with the head pro, we headed to the hotel’s beach club, a breezy restaurant and pool space set on the shore. Despite the strong currents making the beach unswimmable, the view was enough to keep us satisfied.
Immersive Experiences
Beyond the golf course, the resort offers curated experiences such as whale-watching tours. On a 40-foot yacht, we encountered massive humpback whales, guided by a marine biologist who explained their behavior. Scientists suggest that the whales may be attracting mates, cleaning barnacles, or simply enjoying the paradise.
Design and Accessibility
Sordo Madaleno, Mexico’s most prominent architecture firm, designed the resort with plenty of breathing room between clean-lined buildings and groves of cacti. Our two-room villa was stylish and smart, with sliding glass walls offering ocean views. Binoculars provided a glimpse of the whales offshore.
The resort also caters to guests with accessibility needs, offering two ADA-accessible rooms: one standard guest room and one suite. Elevators and ramp access are present throughout, and golf cart transportation is available upon request.
